Homemade liquers


The third element in out liquor is the color. For our coffee liquor we make a caramel color solution. To make this, mix 1 cup of sugar with 1 ounce of water. Bring this solution to a boil, stiriing once. After about 30 minutes, it should turn black, and will have the viscosity of lava. When it starts to smoke, stir it, and add 1.5 cups of water. Keep mixing this mix for two minutes, then remove from heat. Wait approx 15 minutes. Using coffee filters, squeeze out the liquid into a container. Throw away the hard black stuff. This keeps indefinately in an airtight bottle.

For the alcohol content, I use grain alcohol, as this is 190 proof, basically straight alcohol. You can use vodka or other hard liquors but for this recipe, we are going to use grain alcohol.

The recipe in my book calls for food grade glycerine, but I have made this recipe without this and it tastes fine.

Now, to make this liquor, first combine the following ingredients: 7 oz grain alcohol 2 tsp coffee extract 2 tsp vanilla extrct
Shake these together well. Then add the following ingredients: 4.6 oz water 12.5 oz simple syrup 2.5 tsp caramel color 1 tsp glycerine (optional) Age this a minimum of two weeks, and you are ready to try this out. previous
